This is a Shun DM07060: Asian Cook’s knife with a blade length of 7 inches. It features VG-Max Super Steel for a harder, sharper, and lighter blade. The handle is made from Walnut Pakkawood and designed to be held with either the left or the right hand. The Asian Cook’s style of knife is similar to the Chef’s knife, but cuts down on weight by offering a thinner blade. A blade perfect for meats and still strong enough for vegetables.
